We don't know who Chet was, but he knew his garlic! The nice, mild flavor makes this puppy a good roaster. Many of our friends like to use it raw as well.

This is from the "artichoke" variety, so named because the cloves overlap each other like an artichoke. There can be anywhere from 3 to 5 layers of cloves, with no more than 12 in a bulb.
