Whoever names these doesn't really take into account the color of the garlic.....this garlic can really sharpen after 2 or 3 months of storage.

This is from the "artichoke" variety, so named because the cloves overlap each other like an artichoke.  There can be anywhere from 3 to 5 layers of cloves, with no more than 12 in a bulb.
