This bulb will store for a long time. Some years it has a sharp taste and the flavor builds from there. 

This is from the "artichoke" variety, so named because the cloves overlap each other like an artichoke.  There can be anywhere from 3 to 5 layers of cloves, with no more than 12 in a bulb.
